In the past, I have posted about Jell-O desserts for adults and children. One such post was this July 4th Desserts for Children. Since these posts have always been popular, I thought that I would come up with a new one for St. Patrick’s Day! These little Pot-of-Gold Treats were inspired for children and toddlers, but I am sure the older folk would enjoy one too. You will only need three ingredients: Jell-O Lemon-Lime Gelatin Snacks, any type of Gold-Sugar Sprinkles, and Cool Whip. That’s it!
What makes these treats so great is that there is absolutely no cooking (not even boiling water) and no baking. You don’t dirty up any dishes – saving you valuable clean-up time. More amazingly, you don’t have to buy paper cups or plates. The Jell-O cups are just that – cups! They are not only the treat, but they also serve as the dish too! By using plastic cups (and not glass), you can breathe a sigh of relief that the toddlers won’t break a dish or hurt themselves.
If you are busy like most of us, you will like this next part. The total prep time is mere minutes, literally. It simply could not get any easier or quicker!
Prep time is so quick it’s almost embarrassing. And the best part? If you want to prepare the desserts ahead of time, you can. They keep extremely well in the refrigerator, even up to 24-48 hours.
Not wanting to disturb the tops of my little masterpieces, I used Chinet Cut Crystal Cups (the 9 oz. size) and inverted them over the gelatin cups. I had extra cups left over from a previous party – and they worked perfectly, keeping the little Pots-of-Gold intact and air-tight.
No cooking, no baking, no glass dishes to worry about – and only three ingredients!
