Ingredients
  • 2 chopped garlic cloves
  • 2tablespoons olive oil
  • 2cups chicken broth
  • 1cup basmati rice
  • ½cup dried mangochopped
  • ½cup sweetened dried cranberries
  • ½teaspoon salt
  • ¼teaspoon pepper
  • ½cup sliced almonds
  • garnish green onionschopped
Instructions
  1. Saute garlic in olive oil over medium heat for about 1 minute.
  2. Add ½ cup water, chicken broth, and next 5 ingredients. Bring to a boil. Cover and simmer for about 20 minutes, or until rice is tender.
  3. Fluff rice mixture and add sliced almonds. Stir.
  4. Optional Garnish – add a handful of chopped green onions for color and additional flavor.
Recipe Notes

The sliced almonds can either be slightly toasted, or non-toasted.  Toasted almonds can be prepared by baking them in a 350 degree oven for about 6-8 minutes.  The end result should be a nice golden color, and very fragrant.
