Fruited Basmati Rice

This is one of the most wonderful rice recipes I have ever made.  It even tastes delicious reheated!  A perfect dish to bring to a potluck, or as a side dish to your main course.  Beautiful to look at, easy to prepare … and absolutely delicious!

Ingredients
  • 2 chopped garlic cloves
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1 cup basmati rice
  • ½ cup dried mango chopped
  • ½ cup sweetened dried cranberries
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup sliced almonds
  • garnish green onions chopped

  • 2 chopped garlic cloves

  • 2 cups chicken broth
  • 1 cup basmati rice
  • ½ cup dried mango chopped
  • ½ cup sweetened dried cranberries
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup sliced almonds
  • garnish green onions chopped

Instructions
  1. Saute garlic in olive oil over medium heat for about 1 minute.
  2. Add ½ cup water, chicken broth, and next 5 ingredients. Bring to a boil. Cover and simmer for about 20 minutes, or until rice is tender.
  3. Fluff rice mixture and add sliced almonds. Stir.
  4. Optional Garnish - add a handful of chopped green onions for color and additional flavor.
Recipe Notes

The sliced almonds can either be slightly toasted, or non-toasted.  Toasted almonds can be prepared by baking them in a 350 degree oven for about 6-8 minutes.  The end result should be a nice golden color, and very fragrant.
