Fresh Corn Saute
A great way to use corn – fresh off the cob! Easy, delicious, and with minimal ingredients.

Ingredients
  • 4ears cornfreshly cut off the cob
  • 1tablespoon olive oil
  • 2cloves garlicfinely chopped
  • 1 tomatochopped
  • ½teaspoon dried basil
  • ¼teaspoon salt
  • ground black pepperI use about 15 turns via a pepper mill
Instructions
  1. Heat olive oil over medium heat.
  2. Add garlic and saute for about 2 minutes.
  3. Mix chopped tomato, basil, salt and pepper together. Add to pan and cook with garlic for about 5 minutes on medium heat.
  4. Add corn kernels, and continue to cook for an additional 5-6 minutes.
