Cherry Hibiscus Tea Popsicles

If you are wanting a cool and refreshing summer dessert for your next family gathering, I highly recommend these Cherry Hibiscus Tea Popsicles!  Not only are they easy to make, but they are pretty healthy too.  I adapted this recipe from the one I saw on www.BettyCrocker.com.  I followed their recipe exactly, except instead of measuring out the cherries … I put four or five individual cherries in each Popsicle mold to ensure that the same amount of cherries was dispersed evenly.

We make our frozen treats with Tovolo Groovy Ice Pop Molds, instead of using craft sticks or paper cups.  The Tovolo Ice Pop Molds are simply wonderful – they make the entire experience so much fun.  There are six individual molds, and one bottom tray.  Each mold fits into the bottom tray, and is easily removable.  Once in the bottom base, they stand up very securely – allowing me to pour the liquid into them with great ease.  I kid you not, they make the process incredibly fast … with little to no mess.

I usually leave about an inch of space on the top of each mold to allow for expansion of the liquid while it is freezing.  The gorgeous color comes from the Hibiscus Tea and the frozen Cherries!

Here is a clever way to re-purpose an everyday item and prevent messes with frozen treats.  Popsicle Drip Catchers will probably be a big hit at your next gathering, as most people don’t like to run around with sticky fingers!

  • 4 hibiscus tea bags
  • cups boiling water
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 20 - 25 frozen sweet cherries
  • 5 popsicle molds 5-oz. size each
  • 5 craft sticks (if your molds don't supply their own sticks)

Instructions
  1. Put tea bags in a large heatproof container. Pour boiling water over tea bags. Cover, and steep for about 5 minutes. Remove and discard the tea bags.
  2. Stir honey and lemon juice into the tea mixture.
  3. Put 4 - 5 frozen cherries into each popsicle mold. Pour tea mixture evenly into each mold, leaving about one-inch of space on top.
  4. Cover with mold tops (which have the sticks included). If your molds don't have tops or sticks, then cover with foil and insert a craft stick into the center of each popsicle.
  5. Freeze for 6 hours, or until firm. To serve, simply remove popsicle from mold.
