Easy St. Patrick’s Day Soup

The only audible sound at the table was the spoon hitting the bowl, and an occasional “oh my goodness!”  This soup is that good. It is melt in your mouth good, and so easy to prepare.

With St. Patrick’s Day coming up soon, this would be a fun way to add some Irish color to the table.  The sweet potatoes look like chunks of gold, and the leeks and spinach bring out the healthy green goodness in a big way.  Enjoy, and may the luck of the Irish be with you!

St. Patty's Day Soup

Cook Time 20 minutes

Ingredients
  • 2 tablespoons butter
  • 2 leeks sliced
  • 2 cloves garlic minced
  • 1 pound cubed ham
  • 4 sweet potatoes peeled and cut into bite-size chunks
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 4 ounces baby spinach coarsely chopped

  • 2 tablespoons butter
  • 2 leeks sliced
  • 2 cloves garlic minced
  • 1 pound cubed ham
  • 4 sweet potatoes peeled and cut into bite-size chunks
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 4 ounces baby spinach coarsely chopped
Instructions
  1. Melt butter in a large saucepan over medium heat. Add leeks and garlic and cook for about 3-5 minutes (or until tender.)
  2. Add ham, sweet potatoes, broth and thyme. Bring to a boil over medium-high heat. Reduce heat to low and simmer for 10-15 minutes (or until sweet potatoes are tender.)
  3. Stir spinach into soup; simmer just until the spinach leaves are wilted.
  4. Serve immediately.
