Blueberry Streusel Muffins

I made this recipe the other day and just had to share.  They came out wonderful, and the aroma from the oven was divine.  Even the crust was perfect – a light, golden brown.  My husband especially loves them in the morning, with a hot cup of coffee.  They even tasted good the next day, after being popped into the microwave for only about 10 – 15 seconds. Spread with butter, and Ooh La La!!!

The recipe is from Southern Living, and the cookbook’s name is “Heirloom Recipe Cookbook”.  Great recipes from a bygone era; I highly recommend it.  I did make one modification to the recipe; however, that was only pertaining to how I fill the batter in the pans.  The SL recipe advises to fill the muffin pans 2/3 full, and it will produce 18 muffins.  I put all the batter in 12 large muffin pans and then baked them for 35 minutes. Same wonderful results; just bigger muffins 🙂

I used fresh blueberries; however, frozen blueberries are also acceptable.  The only thing I would caution when using frozen berries is to rinse and drain them after they have thawed. You will then need to pat them dry; otherwise, the excess liquid will discolor the batter. Personally, I think fresh blueberries produce the most flavorful results.

Ingredients
Batter
  • 1/4 cup butter softened
  • 1/3 cup sugar
  • 1 large egg
  • 2 1/3 cups all-purpose flour
  • 1 tablespoon plus 1 tsp. baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • 1/2 cup sugar
Streusel Topping
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup butter softened

  • 1/4 cup butter softened
  • 1/3 cup sugar
  • 1 large egg

  • 1 tablespoon plus 1 tsp. baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • 1/2 cup sugar
Streusel Topping
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup butter softened
Instructions
  1. Preheat oven to 375 degrees. Lightly grease muffin pans.
Prepare Batter
  1. Beat butter at medium speed with an electric mixer until creamy. Gradually add 1/3 cup sugar, beating until light and fluffy. Add egg, beating well.
  2. Combine 2 1/3 cups flour, 1 tablespoon plus 1 tsp. baking powder, and 1/2 tsp. salt; gradually add to butter mixture alternately with milk, beginning and ending with flour mixture and beating well after each addition. Stir in vanilla, and fold in blueberries. Spoon batter into prepared muffin pans.
Prepare Streusel Topping
  1. Combine 1/2 cup sugar, 1/3 cup flour, and 1/2 tsp. cinnamon; cut in 1/4 cup butter with a pastry blender until crumbly. Sprinkle on top of muffin batter.
  2. Bake at 375 degrees for 35 minutes or until golden brown. Remove from pans immediately.
Recipe Notes

For smaller muffins, fill muffin cups 2/3 full - will make 18 regular muffins.
