July 4th is definitely the time for patriotic food and I have a red-white-and-blue dessert, Patriotic Trifles, that are the perfect way to celebrate the good ole’ USA!
What’s beautiful about these trifles is how easy they are to make. It has just four ingredients and you literally make them up in mere minutes! They are healthy, fruity and a real show-stopper.
8 oz. container Cool Whip
2 pints Raspberries
1 pint Blueberries
Just layer the cake (diced into cubes) into the bottom of your serving dishes. Layer the fruit over the cake and top with Cool Whip (or your preferred topping.)
Here are a few hints – the Pound Cake can be either a frozen one, thawed and diced. Or, you can bake one from scratch, or from a mix. Make it simple on yourself. After all, your taste buds will be focusing on the berries. The pound cake is just another element; it is not the main star.
I usually make a more flavorable topping, called Lemon Mousse. You will need three ingredients if you decide to make this instead of a regular Cool Whip topping – Milk, Cool Whip and Lemon pie filling. You might want to add a spoonful of the topping at the very bottom of the dish (a lot of people eat up all the topping at first and when they get to the bottom they still want more.
This is one of those desserts that everyone enjoys – even people that don’t like a lot of sweets. The berries are so nutritious, and your topping can either be regular, low fat or sugar-free. Try the Patriotic Trifles and see what raves you receive. Who doesn’t enjoy “throwing” a few berries into a festive dish? They are just so beautiful to make, and even more delicious to eat!
- 1 Pound Cake
- 2 pints Raspberries
- 1 pint Blueberries
- 1½ cups cold fat-free milk
- 1 cup Cool Whip – thawed
- 1 pkg (4 serving size) instant Lemon flavor JELL-O pudding/pie filling
- Just layer the cake (diced into cubes) into the bottom of your serving dishes. Layer the fruit over the cake and top with Lemon Mousse (or another preferred topping.)
- Lemon Mousse topping - Pour 1 1/2 cups cold milk into medium bowl. Add instant pie filling. Beat with a whisk for 2 minutes or until well-blended. Stir in 1 cup of thawed Cool Whip. Keep mousse refrigerated until ready to serve on top of the Patriotic Trifles.
Regular Cool Whip can be used instead of the Lemon Mousse Topping.
