There is nothing better than a warm bowl of Chili on a cold winter’s night. Indeed, our weather will soon be getting chilly … so now is a very appropriate time to share this wonderful recipe! Chili can be made to suit your own personal tastes, giving you the opportunity to make your own unique signature recipe! If you want to add a healthy boost to your batch of goodness, consider adding about 1/2 lb. of greens – such as chard, kale or spinach. Delicious!
- 1 lb. ground beef
- 1 chopped green pepper
- 1 medium chopped onion
- 2 cloves chopped garlic
- 2 (15 oz.) cans dark red kidney beans
- 2 (16 oz.) cans tomatoes, diced
- 2 (8 oz.) cans tomato sauce
- 2 - 3 tsp. chili powder
- 2 tsp. salt
- 1 bay leaf
- Cook ground beef, onion, green pepper and garlic until meat is browned - about five minutes.
- Drain fat.
- Stir in remaining ingredients.
- Cover and simmer for 1 hour.
- Remove bay leaf before serving.
Some optional classic toppings are grated cheddar cheese, crushed corn chips, hot sauce, sour cream and/or crumbled bacon. Yum!
I cooked up this delicious batch of Chili with the help of one of my new Fall kitchen tools – a Core Spoon. I bought this two-piece set at a local store.
